Chicken and Garlic Boofday "Cupcakes"


Mix together in a bowl:

500g (1lb) Minced (Ground) Chicken
2 teaspoons crushed garlic
1 tablespoon chopped parsley
1/2 cup left over roughly chopped cooked vegetables
1 beaten egg

If too moist, add some packaged breadcrumbs to bind.
Roll into balls (a bit larger than a golf ball) and coat in bread crumbs. Place balls into well greased patty tins or muffin pans.

Bake in oven 150C (350F) for 1/2 to 3/4 hour until browned and crispy on the outside but still soft in the middle.
Remove from oven and cool. Store in the refrigerator.

Makes about 20.
